Indian sweet kesari
Kesari is one of my favorite sweet . Its very easy to cook. We used to make this sweet during festivals.
Rava (semolina ) – 1 cup
Ghee – 100 Grams
Sugar – 3 cups
Cashews – 10 no’s
Raisins – 10 no’s
Water – 3 cups
Turmeric/kesar color – pinch
Cardamom – 5 no’s
Roast rava/semolina till it becomes crispy,once its done place it into bowl and keep it aside then pour 100 grams of ghee in the pan once it is heated add cashews, raisins and cardamom till cashews get roasted(light brown) after that pour 3 cups of water into it and make it boil for 5 mins then add 3 cups of sugar and stir well .
once its getting boiled reduce the heat and add rava/semolina (don’t pour fully at one shot)slowly by one hand and stir at the same time by other hand.so that no lumps will be formed.
After adding semolina just add few spoons of ghee and cook under medium heat for 7 to 8 mins.
Now the delicious kesari is ready:-)
